Stove Top Chili (No Beans)

I love this recipe best in the crock pot. But, if you want to just throw something together and don't have time to put it all in the crock pot in the morning, you can do it on the stove. At the bottom of the stove top directions, I will put the Crock Pot directions. This is ALWAYS a hit every time I make it, I hope you enjoy it as much as I do!

 

Ingredients:

2 lbs. Ground Beef or Turkey

1 onion, diced

3 cloves of garlic, minced

1 red & 1 green bell pepper, diced

1 cup of carrots finely chopped

1 cup of celery finely chopped

( 1 ) 28 oz can of crushed tomatoes

( 1 ) 14 oz can of petite diced tomatoes

( 1 ) 15 oz can of tomato sauce

1 package of bacon

2-3 Avacados diced


Spices:

2 Tbsp Chili Powder

1 Tbsp Oregano

1 Tbsp Basil

2 tsp Cumin

1 tsp Salt

1 tsp Pepper

1 tsp Onion powder

1 tsp Cayenne pepper


Stove Top Directions:

Put a Tbsp of olive oil in a big pot then cook the meat until halfway cooked. The majority of the meat should be a light brown. Keep the heat medium low that way you don't cook the meat too fast. Once the meat is halfway cooked, add all of the spices and the onion and garlic. Stir and allow to cook for a few minutes. Then, add the chopped carrots, bell pepper and celery. Mix everything together then add the crushed tomatoes, diced tomatoes and the tomato sauce. Stir then put the on medium low with a lid and allow it to cook for about 30 minutes. Stir every 10 minutes until done. If you want the veggies to be softer cook for a longer time.

In a separate pan, chop the bacon and cook until desired crunchiness. You can also put the bacon in the oven on 375 for about 15-20 min. Line a cooking sheet with foil or parchment paper then lay the strips of bacon down.


Once the chili is done serve up then put the pieces of bacon on top with avocado. You can also add sour cream and fresh graded cheese!



Crock Pot Directions:

Sauté onion and garlic then add the meat. Cook until halfway cooked which should be a light brown color. Drain the excess liquid then add to crock pot. Stir in all of the rest of the ingredients then mix it all together well. Put on low for 6 hours and cover with lid.


Cook bacon the bacon as suggested in the Stove Top Directions.


Serve with bacon pieces and diced avocado on top. You can also add fresh graded cheese and sour cream.
