3 Country Goulash

I know it looks like mush but it is SO GOOD! Its got a sweet & savory meaty flavor with some creaminess to it. I was trying to use what I had around the house and come up with something new and tasty. I got the name for my dish from my dad (he's been a chef since he was 17). When I called him to brag about my dinner he laughed at me and said I made a 3 Country Goulash. I put in spices that a lot of Jamaican dishes use, then made it Italian by adding marinara sauce then put it over potatoes which is American. So, I decided to name it that because I didn't have anything better in mind. So, here is my delicious dinner recipe! I hope you enjoy it as much as we did!
Side Note: I called my mom because I wasn't sure where I was going with this and I told her what I had already put together and she gave me the best idea ever of adding cream cheese! So, thank you mom!
3 Country Gouglash
Ingredients:
Package of uncooked Sweet Chicken Italian Sausage (I got mine from Trader Joes. Comes in a pack of 5 sausages)
1 Tbsp. butter (I prefer to use the Kerrygold butter)
1/4 Yellow Onion
1 Yellow Squash (chopped)
1 tsp. Honey
Hefty Pinch of Nutmeg (If your the kind of person that needs exact measurements, its probably about 1/4 Tsp.)
Hefty Pinch of Cloves
1/4 Cup of Cream Cheese
1/4 Cup of Marinera Sauce
Small bag of red potatoes (1-2 lb.)
Salt & Pepper to add at the end
Directions:
In a large skillet on medium head melt butter then add onion. Allow the onions to cook until softened, about 3 minutes. While the onions are sautéing, cut red potatoes into 4. Add them to a medium pot then add enough water to completely cover the potatoes. Set on high heat so the water comes to a boil. Check the potatoes after about 10 minutes. You want them to be soft enough to pierce with a fork without completely falling apart.
Squeeze the uncooked sausage out of the casing (that thin layer on the outside of the sausage) into the pan. Mix together so the onions are evenly spread through the meat. Then add in honey, nutmeg and cloves. Allow the meat to cook for about 10-15 minutes mixing up occasionally to cook the meat evenly. Add the Yellow Squash then cook for another 5 minutes on medium heat. Lower the heat to a medium low then add marinara sauce and cream cheese. Stir and blend until all cream cheese is melted.
Once potatoes are finished strain them. Add the potatoes to the plate, skin side down, then press down once with a fork giving it a gentle mash. Add the goulash on top of the potatoes then top with Salt & Pepper.
